This time we present you a rich recipe for carapulcra.
Ingredients:
• 1LB of dried potato yellow incas food
• 600 gr of pork (I used boneless leg without skin)
• 6 fat-free and skinless chicken encounters (I used hip)
• 100 gr of roasted and ground peanuts
• 1 medium onion cut into very small squares
• 2 fresh yellow peppers and liquefied with a splash of water (If you do not like the spice, do not forget to remove the veins or the white pulp)
• 3 or 4 tablespoons of red pepper or liquefied or ground panca
• 1 tbsp. ground garlic
• 1/3 cup of red wine
• 2 cloves (Optional)
• 1/4 tsp. cumin
• 1/2 tsp. black pepper
• 1/2 tsp. oregano
• 1/4 cup of oil
• Salt to taste
For the garnish:
• Parboiled cassava
• White rice
